<p><strong>How to Prepare: </strong><br />
2-1/2 pounds ground chuck, salt and peppered to your desire. Roll 4 large meatballs/ reserving enough meat to make 4 small flat patties to make toppers for. With your meatballs, create and form a &#8220;bowl&#8221; (not making them too shallow, but deep enough for your filling. Add to the center &#8220;bowl&#8221;: grated cheese and mushrooms and onion powder. (to make it Mexican style, add crushed red pepper or your favorite stuffing mixture) Next, place your topper (flat patty) on top of your mixture, making sure the patty is small enough to lay on top/inside, so you can bring the sides ofthe bowl up and blend into the topper to seal. Note: If you are having a problem with sealing them, use egg white. Place the meat bowl in a heavy pre-heated skillet, cover with lid, and cook until browned on both sides, being very careful not to break the bowl. Place browned patties in shallow pan and cook in the oven for 30 min. @400 degrees. Serve with a salad and Enjoy! It&#8217;s worth the work. This delicious cheese steak can be made in advance and the filling can be altered to your favorite stuffing allowance.</p>

<p><strong>How to Prepare: </strong><br />
Heat oven to 375 degrees. Lay the sole in a baking dish and sprinkle with salt &#8212; let sit while preparing the filling. </p>
<p>In a skillet, melt butter and saute onions &#038; garlic until soft. Add shrimp and crab meat and heat through. Add black pepper to              taste. While that is heating, drain any liquid off the fish fillets. </p>
<p>Add parmesan cheese to the shrimp/crab mixture and stir until melted. Then drop tablespoon-size portions of the shrimp mixture onto the              fish fillets and roll up (you can secure with a toothpick, but I just arrange it so that the &#8220;seam&#8221; is at the bottom.) </p>
<p>Arrange the fillets in the baking dish as far apart from one another as possible. If there is any shrimp mixture left after filling all the fillets, spread it over the top of the fish rolls. Then, if you wish, sprinkle a little more parmesan over the top. (I also added a little paprika for color.)</p>

Heat oven to 350. For best results, use glass bottom baking dish (if not available, cookie/baking sheets are fine too). No need to spray or butter.</p>

Prepare two bowls, one w/ the beaten egg, the other with the Atkins mix &#8212; which includes the bake mix, adobo seasonings and liberal amounts of salt and pepper (to taste). (To those making-style, grate your parmesan/romano cheese into the bake mix, and add liberal amounts of Italian seasonings and adobo). Mix baking mix around till everything is well-blended. Dip chicken into egg batter, cover well. Take the egg-battered chicken and dip into bake mix, cover well. Take covered chicken drum and place into baking dish. Repeat for as many drums as needed. When completed, place into pre-heated oven. Baked for about 40-45 minutes.</p>

<p><strong>Ingredients:</strong></p>
<ul>
<li>2 pounds beef top loin steaks &#8212; cut into 4 or 6 pieces</li>
<li>1 Tablespoon butter</li>
<li>1 each red bell pepper (cut into strips)</li>
<li>1 each green bell pepper (cut into strips)</li>
<li>Sauce</li>
<li>1/2 pound fresh mushrooms (sliced)</li>
<li>2 Tablespoons butter</li>
<li>3 tablespoons onion (chopped)</li>
<li>1 cup heavy cream</li>
<li>1 cup water</li>
<li>2 teaspoons soy sauce</li>
<li>1 each salt and pepper (to taste)</li>
</ul>
<p><strong>How to Prepare:</strong><br />
Saute sliced mushrooms in butter until slightly browned. Add in onions and saute for 3 minutes.<br />
Add remaining ingredients and let simmer, uncovered, until slightly thikened(you can whisk in 1-2 teaspoons of soy flour that has been dissolved in 1/4 cup water if desired for a thicker sauce).<br />
Fry steaks in remaining butter for 2 minutes each side. Remove and stir fry pepper strips for 2 minutes. Add steaks and sauce back in and simmer 10 minutes or until steaks are at desired doneness. </p>

<p><strong>Ingredients:</strong>  </p>

<li>8 cups Atkins Bake Mix</li>
<li>2 Tbl. unsweetened chocolate</li>
<li>1 tsp baking powder</li>
<li>3/4 tsp salt</li>
<li>1 stick (1/2 cup) unsalted butter</li>
<li>1/2 cup sugar (Splenda)</li>
<li>3 large eggs</li>
<li>1 lb bittersweet chocolate (I suggest you to use 1 bag of LowCarb Success sugar free semi-sweet chocolate chips plus 3 PureDelite dark hocolate bars)</li>
</ul>
<p><strong>How to Prepare:</strong><br />
First preheat oven to 350 degrees. Stir together bake mix, cocoa and baking powders and salt.<br />
In a double boiler, melt 3/4 of the chocolate and all the butter; stir until smooth.<br />
Remove chocolate mixture from heat and stir in sugar.<br />
Mix eggs in one by one. Combine with dry  ingredients and mix until just combined. At this point, I mixed in the additional chocolate chips, though you may want to save them to sprinkle on the dough before baking.<br />
Chill dough, covered in fridge, for 10-60 minutes.<br />
Drop rounded tablespoon measures of dough about 1 inch apart on greased cookie sheet.<br />
Stud cookies with additional chocolate, if you didn&#8217;t mix it into the batter earlier.<br />
Cook for 10 minutes. Pay attention not to overcook the cookies. Cookies will have a cake-like texture.</p>

<p><strong>How to Prepare:</strong><br />
Heat 1 teaspoon oil in a large skillet. Sprinkle beef with 1/2 teaspoon salt.<br />
Brown meat over medium-high heat in two batches; transfer to Dutch oven. Pour drippings into one-quart measure; add enough water to make 4 cups. </p>
<p>Heat remaining oil in same skillet. Add onions, peppers, jalapeno and garlic; cook 4 to 5 minutes, until softened. Stir in remaining salt and spices; cook 1 minute. Stir in tomato paste; cook 1 minute, then add 1 cup water mixture. Bring to a boil; scrape up any brown bits and stir into beef. Add remaining water; bring to a boil. </p>
<p>Cover and simmer over low heat 1 1/2 hours. Increase heat to medium; uncover and cook 30 minutes more. </p>
<p>Garnish with lime and  sour cream, if desired. Makes 6 servings. </p>

<p>Key points:</p>
<ul>
<li>The overweight or obese healthy volunteers who wanted to lose weight were placed on a very low-carbohydrate diet (less than 25g/day of carbohydrates), including nutritional supplementation, recommendations about exercise, and attendance at group meetings to determine the effect of a very low-carbohydrate diet program with no limit on caloric intake.</li>
<li>Forty-one individuals or 80 percent followed the nutrition regimen for the duration of the study.</li>
<li>The regimen led to sustained weight loss during the six-month period. Body weight decreased significantly by 10.3 percent (or an average of almost 20 pounds) from the beginning to the end of the study. Body mass index decreased by 3.2 kg/m2. Average percentage of body fat significantly decreased by 2.9 percent.</li>
<li>Total cholesterol level decreased by 11mg/dL; low-density lipoprotein cholesterol level decreased significantly by 10 mg/dL; triglyceride level decreased with a high level of significance by 56 mg/dL; high-density lipoprotein (HDL) cholesterol level increased significantly by 10 mg/dL; and the cholesterol/HDL cholesterol ratio was also significantly decreased by 0.9 units.</li>
<li>There were no serious adverse effects. Further controlled research is warranted.</li>
</ul>
<p>In addition to the ongoing weight-loss study, Duke researchers also performed a two-armed, randomized controlled trial to study 120 obese hyperlipidemic adults. The study compared the controlled carbohydrate Atkins Nutritional ApproachTM to the American Heart Association (AHA) Step I diet advocated by many health professionals for cardiovascular health. In each arm of the study, 60 subjects were monitored for clinical values, side effects, body composition and bone-mineral density. Food records provided measures of caloric intake as well as carbohydrate, protein and fat intake. This comparative study demonstrated that subjects on a controlled carbohydrate eating program lost both more weight and more body fat than subjects following a low-fat diet.  In addition, those subjects controlling their carbohydrate intake showed a decrease in triglycerides and total cholesterol as well as an increase in HDL (“good”)cholesterol levels. The full results of this research, including some groundbreaking data regarding our expanding knowledge on the role of cholesterol in heart disease, has been submitted for publication in scientific journals.</p>

Preheat oven to 300f. In an oven proof pan with a tight fitting lid, saute onion in bacon grease until slightly translucent. Add pork cubes and saute for 5-6 minutes or until they change colors. Then add the cabbage and remaining ingredients. Bring to a simmer, cover tightly with lid.<br />
Place in oven and let cook for 3-4 hours. You can strain the juices out and reduce them and serve with the dish or just use a slotted spoon and serve as-is.<br />
